Atomic Buffalo Turds

Jalapenos...good, Cream Cheese...good, Lil Smokey's...good...Bacon...GOOD!  What's not to love about a jalapeno stuffed with cream cheese, topped with a lil smokey and wrapped in bacon?!  Nothing, that's what.  Don't settle for boring Jalapeno poppers, turn it up a notch and stuff a lil smokey in there.  Why are they called Atomic Buffalo Turds?  I don't know what it means.  I'll be honest, I don't think anyone knows what it means anymore.  Scholars maintain that the translation was lost hundreds of years ago.

I cooked these on my Traeger pellet grill, but you can do these in the oven if you'd like, you'll miss out on that smokey flavor, but you'll like the results.  Cooking temperature is 225 degrees for 2-3 hours.

What you'll need...

  • 6 jalapenos
  • 4 ounces of cream cheese (softened)
  • 1 package of Lil Smokey's (cocktail sausage)
  • 12 slices of bacon

Start your Traeger on smoke for 2-4 minutes, lid open.  Once the fire has started, close the lid and set the temperature for 225.  If using an oven, set it to bake at 225.

Cut off the stems of the Jalapenos and then slice in half lengthwise.
Scoop out the seeds and membrane inside each jalapeno with a small spoon.  *Pro-tip - wear gloves.  Spread the softened cream cheese inside the jalapeno.  10 seconds in the microwave should soften the cream cheese enough for this step.  Place a smokey on top of the cream cheese and press in slightly.
Wrap each jalapeno/cheese/smokey in a slice of bacon.
Place the Atomic Buffalo Turds directly on the grill grates in your smoker (baking sheet for the oven) and cook for 2-3 hours, until the bacon is cooked through.  Remove from the smoker/oven and serve warm.
