Tri-Tip Roast

Did somebody say "steak?"  Hell yes I did.  I'm firing up the ol' Traeger and reverse searing this hunk of meat.  It's a great way to serve a group of meat eaters without breaking the bank.

Smoked Pork Belly Tacos

You know where bacon comes from?  Pork belly.  Think of these like a tortilla stuffed with big chunks of bacon topped with a zesty pico de gallo and tangy cilantro sour cream.

Smoked Mac N Cheese

I'm not going to lie to you, Mac N Cheese out of the box is damn good.  This is better.  A hint of smoke on top of layers of cheese and pasta makes for the ultimate comfort food.

Rack of Lamb

Whoa, whoa, whoa...stop the clock!  Someone got fancy!  Yes, a rack of lamb cooked low and slow to impress your date.  Pour a glass of Pinot, put on some Miles Davis and dim the lights because it is on.

Atomic Buffalo Turds

Jalapenos...good, Cream Cheese...good, Lil Smokey's...good...Bacon...GOOD!  What's not to love about a jalapeno stuffed with cream cheese, topped with a lil smokey and wrapped in bacon?!  Nothing, that's what.  Don't settle for boring Jalapeno poppers, turn it up a notch and stuff a lil smokey in there.  Why are they called Atomic Buffalo Turds?  I don't know what it means.  I'll be honest, I don't think anyone knows what it means anymore.  Scholars maintain that the translation was lost hundreds of years ago.

Wing Wednesday: BBQ Wings

Wing Wednesday rolls on.  This week it's BBQ Wings.  You can make these on your grill, in your oven or even smoke them (my preferred method).  As long as you have some wings, some sauce and some heat you can be feasting on these savory BBQ wings in no time!

Rib Eye Steak: The Reverse Sear Method

I know what you're thinking, "I know how to cook a steak."  I thought the same thing, until I got my Traeger and started using this method.  I was doing it all wrong.  The reverse sear method uses low heat to cook the steak through and then high heat to sear the outside just before serving.  You get a tender, juicy internal along with a seared and flavorful crust.

Barbecue Pulled Pork

A classic barbecue food, pulled pork, this time with a kick.  This works for either a large pork shoulder with enough food for a crowd, or smaller shoulder roast for your family.  Plan an hour to an hour and a half per pound of cooking time plus another hour to rest before pulling and serving.

Don't like to share?  Then a Cornish Hen (or Cornish Game Hen) is for you.  This little guys come in single serving size so you can make them all up the same way or, if you want to share, try different spices and rubs on a few and split them among your family and friends.

Smoked Turkey on a Traeger Pellet Grill

Thanksgiving is about spending time with friends and family.  Not being stuck in the kitchen cooking.  Cook that bird on your smoker on the patio and get out of the kitchen.

BBQ Chicken Thighs

Chicken breasts, white meat, is fine for a salad, or chicken tenders.  But the really flavorful part of the bird is the dark meat, the thighs and legs.  Below is my recipe for juicy, tender and tasty BBQ chicken thighs.

We've all been there, it's Sunday afternoon and talk about what to make for dinner begins.  You want something easy, tasty and filling.  Ribs sound good, but those take 6 hours of low-n-slow cooking and you don't want to eat at 10PM, need to focus on Homeland.  Here you go, a quick and easy recipe for tender, moist, and savory ribs.
