Sous Vide Pork Chops

How do you make delicious, perfectly cooked pork chops at home?  With a Sous Vide Circulator!

Sous Vide isn't a new cooking technique, but it's one that has become more popular as the equipment has come down to consumer prices.  What is Sous Vide?  It's a technique wear you cook your food in a low temperature water bath for a long period of time. Because you're setting your water temperature at your desired doneness you can't over cook your meat.

What you'll need
  • Boneless Pork Chops, 1"-1.5" inches thick
  • Salt and Pepper to taste
  • Oil
  • Sous Vide Circulator
  • 10 qt+ Vessel for water
  • Vacuum Seal bags, or zipper bags
Prepare your Sous Vide water bath and set the temperature for 140 degrees.

Sprinkle salt and pepper on all sides of the pork chops.  
Heat a tablespoon or so of oil in a pan on med-high heat.  Once up to temperature sear both sides of the pork chops, about 1 minute on each side.
Place the pork chops into separate bags and vacuum seal.  Place them in the water bath.  Set a timer for one hour.  If using a zipper bag place the pork chops in to separate bags and slowly lower them into the water bath.  The water pressure will push the air out of the bag.  When the chops are fully submerged zip the bag closed.

After an hour in the water bath remove the pork chops from their bags and sear again on the hot pan, about 1 minute a side.  Enjoy!
