Tri-Tip Roast
Did somebody say "steak?" Hell yes I did. I'm firing up the ol' Traeger and reverse searing this hunk of meat. It's a great way to serve a group of meat eaters without breaking the bank.

Smoked Pork Belly Tacos
You know where bacon comes from? Pork belly. Think of these like a tortilla stuffed with big chunks of bacon topped with a zesty pico de gallo and tangy cilantro sour cream.

Smoked Mac N Cheese
I'm not going to lie to you, Mac N Cheese out of the box is damn good. This is better. A hint of smoke on top of layers of cheese and pasta makes for the ultimate comfort food.

Rack of Lamb
Whoa, whoa, whoa...stop the clock! Someone got fancy! Yes, a rack of lamb cooked low and slow to impress your date. Pour a glass of Pinot, put on some Miles Davis and dim the lights because it is on.

Rib Eye Steak: The Reverse Sear Method
I know what you're thinking, "I know how to cook a steak." I thought the same thing, until I got my Traeger and started using this method. I was doing it all wrong. The reverse sear method uses low heat to cook the steak through and then high heat to sear the outside just before serving. You get a tender, juicy internal along with a seared and flavorful crust.

Thanksgiving Cranberry Sauce
When I was a kid, I thought cranberry sauce simply came from a can. Pop the top, slide out the "tube" of cranberry sauce, and slice into discs. No one would touch it with a ten foot spoon and it'd simply go to where it should have gone in the first place, the trash can. Those of you reading this in 10 years will think "ah hem, that should go in the compost bin." I know, I know.

BBQ Chicken Thighs
Chicken breasts, white meat, is fine for a salad, or chicken tenders. But the really flavorful part of the bird is the dark meat, the thighs and legs. Below is my recipe for juicy, tender and tasty BBQ chicken thighs.
