Rib Eye Steak: The Reverse Sear Method

I know what you're thinking, "I know how to cook a steak."  I thought the same thing, until I got my Traeger and started using this method.  I was doing it all wrong.  The reverse sear method uses low heat to cook the steak through and then high heat to sear the outside just before serving.  You get a tender, juicy internal along with a seared and flavorful crust.

Wing Wednesday: Garlic Parmesan Wings


The Parade of Chicken Wings continues this week with Garlic Parmesan Wings.  Not everyone loves buffalo style wings, which I posted last week.  These flavors should satisfy your other party guests palate.  The best part?  You can prepare these just like the buffalo wings, simply toss them in the Garlic Parm sauce instead of the Buffalo sauce!

Barbecue Pulled Pork

A classic barbecue food, pulled pork, this time with a kick.  This works for either a large pork shoulder with enough food for a crowd, or smaller shoulder roast for your family.  Plan an hour to an hour and a half per pound of cooking time plus another hour to rest before pulling and serving.

Sweet Potato & Chorizo Hash (the one Pesos used to have)

One of my favorite Seattle drinking establishments is Pesos.  If you’re my friend, we have probably had a margarita there (or 5).  Their food is also quite tasty, but sometimes they remove really yummy dishes off their menu, which leaves their hungry guests disappointed.  This was the case with their Sweet Potato Chorizo Breakfast Hash.  I have decided that I can make my own, and make it as delicious if not better; if you’ve been to a tailgate with me this is my signature dish that wins everyone’s approval. Every time.

Thanksgiving Cranberry Sauce

When I was a kid, I thought cranberry sauce simply came from a can.  Pop the top, slide out the "tube" of cranberry sauce, and slice into discs.  No one would touch it with a ten foot spoon and it'd simply go to where it should have gone in the first place, the trash can.  Those of you reading this in 10 years will think "ah hem, that should go in the compost bin."  I know, I know.
